You're sitting at the dinner table anxiously awaiting the food to come out of the kitchen. You can smell the ham, fresh out of the oven just sitting on the kitchen counter, taunting you to come eat it and the cheesy potatoes, 98% cheese and 2% potatoes, being poured into the serving tray. However, something is missing. As your mom, aunts, and grandma bring out the food, you finally see it. The very last dish to be served, the stuffing! Stuffing is easily the best food to eat at Thanksgiving time. It is the perfect addition to any dish and just gives off fall feels all around! Did you know that the earliest documentary evidence of stuffing was in a Roman Cookbook? It is called, Apicius De Re Coquinaria. It contains recipes for stuffed chicken, dormouse, hare, and pig. Most stuffing recipes described in the book contain vegetables, herbs and spices, nuts, and spelt (a type of old cereal). Even people from a long time ago knew how to do Thanksgiving right! Today stuffing is not only used to put inside dead animals to eat but it is its own dish for people to eat! I am very thankful for the ancient Romans that recorded their stuffing making! Because of that, stuffing has evolved and is now better than ever!
